We had a cowboy theme for Truett and Cameron’s first birthday party, so I thought it would be appropriate to have the redneck armadillo cake, complete with red velvet cake mix.  Here’s how that turned out:

I used a Wilton football cake pan to create the shape of the body.  I followed a great tutorial, but I used my own icing recipe instead of using fondant.  The “dirt” is brown sugar.

I know–not the best picture, but you can see better.  Anyway, this was one of my favorites to make!
